  • 1cup ofwhole wheat flour
  • 1/3cup ofhemp seeds
  • 1/2tablespoon ofbaking powder
  • 1teaspoon ofbaking soda
  • 1teaspoon ofground cinnamon
  • 1pinch ofsalt
Wet ingredients
  • 1cup ofgrated carrots
  • 1/2cup oftraditional yogurt
  • 1/3cup oforange juice
  • 1/3cup ofmilkof your choice
  • 1/4cup ofmaple syrup
  • 1/4cup ofcanola oil
  • 1teaspoon ofvanilla extract
  • 1egg
  • 1zest of an orange
Ingredients for the frosting
  • 1/2cup ofcream cheese, softened
  • 3cups ofunsalted butter, softened
  • 1cup ofpowdered sugar
  • 2tablespoons ofjuice from a fresh orange
  • 1zest of an orange
Instructions
  1. Preheat the oven to 350 ° F and place the rack in the center of the oven.
  2. In a medium bowl, combine the dry ingredients with a whisk.
  3. In a second bowl, whisk all the wet ingredients together.
  4. Make a small hollow in the dry mixture to gradually incorporate the liquid mixture. Mix well with a fork.
  5. Oil a 12 muffin pan. Use an ice cream scoop to fill the 12 muffin pan. Bake for a minimum of 20 minutes.
  6. While the muffins cook, prepare the frosting. With a mixer, combine all the ingredients until you get a smooth, even texture.
  7. Take the muffins out of the oven and let them cool for about ten minutes before unmolding.
  8. Let the muffins cool completely before frosting them.
