Quick and easy hemp pancakes

“If you already know me, you know I love incorporating hemp seeds into my recipes.

This time, I added hemp flour. It contains more protein and fiber than whole wheat flour, which makes the recipes nutritious and satisfying. I added a vegetable (carrot) to it.”

  • 2 ¼cups ofquick cooking rolled oats
  • 1/3 cup ofhemp seedsORIJIN
  • 1/4 cup ofhemp flourORIJIN
  • ¼cup ofwhole wheat flour(or all-purpose, unbleached)
  • 1teaspoon ofcinnamon(ground)
  • 1teaspoon ofbaking soda
  • 1/2teaspoon ofginger(ground)
  • 1 pinch ofsalt
Wet ingredients
  • ½cup of100% pure orange juice, without pulp
  • 1/3 cup ofbrown sugar, well compacted
  • 1/4cup ofcanola oil(or other vegetable oil)
  • 1/4 cup ofunsweetened applesauce
  • 1 egg
Ingredients for happiness
  • 1/2 cup ofgrated carrots
  • 1/3 cup ofdark chocolate chips
Instructions
  1. Preheat the oven to 350 F and cover a baking sheet with parchment paper.
  2. In a large bowl, combine all the dry ingredients with a fork.
  3. In a small bowl, whisk all the wet ingredients together.
  4. Add the wet ingredients to the dry and coarsely mix.
  5. Mix with a fork and add the ingredients for happiness.
  6. Using an ice cream scoop, form 10 pancakes.
  7. Flatten slightly with a fork.
  8. Bake for 20 minutes.
  9. Let cool before tasting!
