Apple, hemp and maple pancakes

These pancakes are very soft and slightly sweet. With a vegetable drink, it’s an ideal fall breakfast.

Wet ingredients
  • 1cup ofapplesauce
  • 1/3cup ofmaple syrup
  • 1/4cup ofcanola oil
  • 1large red apple,washed and cut into small cubes
  • 1egg
Dry ingredients
  • 1 1/4cup ofall-purpose flour, unbleached
  • 1/2cup oflarge oatmeal
  • 1/3cup ofhemp seeds
  • 1/2tablespoon ofbaking powder
  • 1teaspoon ofground cinnamon
  • 1/2teaspoon ofground ginger
  • 1/2teaspoon ofbaking soda
  • 1pinch ofsalt
Topping
  • 12nutsof your choice (pecans, walnuts, almonds, ...)
  • 1tablespoon ofmaple syrup
  • 12very thin apple slices
Instructions
  1. Preheat the oven to 350 ° F and place the rack in the center. Line 2 baking sheets with parchment paper.
  2. In a medium bowl, whisk all the wet ingredients together using a whisk.
  3. In a second bowl, mix the dry ingredients together, using a fork.
  4. Pour the wet ingredients into the bowl of dry ingredients. Mix gently with a spatula.
  5. Portion 6 patties per baking sheet, being careful to leave 2cm of space between them.
  6. Dip the nuts in the maple syrup. Place the walnuts on the patties and let the excess syrup run over them.
  7. Place the thin apple slices next to the walnut.
  8. Bake for a minimum of 20 minutes. The pancakes are ready when the sides are golden brown. If necessary, return to the oven for a few more minutes (2-3 minutes).
  9. Let cool 5 minutes before tasting!
